From the traditional lamb delicacy Rogan Josh to the leafy green Haakh, they have it all. Don't underestimate their vegetarian delicacies like the soft Chaaman (Paneer in a yellow gravy), spicy Dum Aloo and the subtle Nadur Yakhni (Lotus stem cooked in a yoghurt based gravy).
