You can do training about a certain field you want to pursue in. Then after that do internships related to the same or related to that course. Whenever you make your CV always make it in bullet points and the longest the internship, give more value to that internship. Talk more about it . Also whenever the HR ask about you always keep at least 5 points that are not mention in CV

A good course to enhance your CV totally depends on your background and the job you are applying for. You can visit Coursera and Udemy sites and choose the domain you are willing to apply to and then search for relevant courses. Most of the courses have on these platforms have ratings and will tell you whether people have liked it or not. This will help you decide whether you should be pursuing it or not.
